I love having rendered lard on hand for all manner of cooking. When properly rendered, lard doesn't have any pork flavor at all, it's just a creamy fat that lends itself to many non traditional uses. Used along with goat milk, it's make a great hot chocolate or mocha.
Honey from the hive
Pinch of salt
Fresh goat milk
Grated 99% chocolate
Fresh grated nutmeg
Shot of espresso
Place the lard, honey, salt, milk and grated chocolate in a double boiler if you have one. If not, place all the ingredients in a stainless steel bowl that will sit on top of a pot without letting any steam escape the pot, this will act as a double boiler when the bowl is sitting on top of the pot. Get the pot of water boiling, place the bowl on top of the pot and stir the milk until the chocolate has melted and is smooth. Taste the milk and adjust for sweetness and more chocolate if needed.
When the hot chocolate is ready pour it in a mug, add some cinnamon, the shot of espresso and top with fresh grated nutmeg.... Enjoy!
